I think one interpretation of the water and blood in v.6 can be Jesus’ water baptism, when the Father said, “This is my beloved Son…”, and Jesus’ crucifixion. And the water and blood in v.8 can be linked with the Father and Son in v.7 because the Father declared at Jesus’ water baptism that this is my beloved Son.

I think v.6 means that humans are gods in the sense that we are created, or birthed, by God, so we are all children of God. But v.7 says we will die like men, which means we’re not like God Almighty, who is eternal, but are like humans who die.
